Soft Roll Recipe



Ingredients :

Sponge:
* 2 L yeast
* 1 1/2 c lukewarm water
* 2 t rock salt
* 1 t sugar
* 4 c all purpose flour

Dough
* 1 1/2 kg all purspose flour
* 3/4 c skim milk or powered milk
* 2 c water
* 2 t dough softener
* 8 eggs (beaten)
* 1 c melted butter
* 1 c sugar

Procedure:
1. Dissolve 2 t yeast 1 1/2 lukewarm water, add 2 t salt and 1 t sugar. Set aside for 5 mins.
2. Add 4 cups flour, stir to make sponge dough. Ferment for 20 mins.
3. Prepare liquid mixture: 2 cups water, 1 cup melted butter and 8 slightly  beaten eggs, 1 cup sugar and 2 t dough softener, mix thoroughly. Add 1 1/2 kg flour gradually and knead until smooth.
4. Ferment for 1 hr punch down and divide dough into desired sizes (50-60g)
5. Proof for 30 mins. Slightly brush with egg white or evap milk.
6. Bake at 375 def F for 15-20 mins or until done.
